My wife also likes them with her cup of coffee. When I was a kid my mom would make homemade pies from scratch, even the pie dough. The leftover pie dough she would make these cinnamon rolls. A few years ago I was shopping at Rimping and found pie crust mix and thought maybe that would work. Works very well with a very light flaky pastry when done. Just mix the dough with 1/3 cup of water and knead into a ball. I put flour on the table top and put the ball of dough on it and press it out to flatten it some. Then using a large cylindrical drinking glass, don't have a proper roller, coated with flour roll the dough out into a thin, pie crust thickness, piece. I use a pastry brush and melted butter and coat the dough with it to allow the items to stick to it. Then sprinkle a thin layer of sugar and on top of that a layer of powered cinnamon. Cut it into 4 or 5 slices then cut across each slice another 3 or 4 pieces and roll the slices up. Put on cooking sheet, use the remaining melted butter and brush over each one. Put in oven at 230 C for 10 minutes and that's it. My large table top oven works perfectly. Photo of the pie premix and the results. I'll give them a go with the puff. could be a good recipe for diabetics without the sugar of course, been reading a lot about the benefits of cinamon for diabetes lately, dont know how true they are but anythings worth a go.
