The observation deck at Suvarnabhumi is relatively lame. It is at the back of the main passenger terminal building - land-side (i.e. the main hall where you check in on level 4, then proceed up via elevator or escalator to the upper-most level (7?).

You really can't see much as you are so far away from the tarmac.

Not sure about DMK, not a lot of height in the terminal building and not a lot to see?

DMK has an observation deck. Never been there though. It is at the end of the hall at the side of the AirAsia check-in counters. You will need to take the escalator up and turn right.

I've taken groups of upcountry kids that have never seen an airplane close up, to both, lots of fun.

At DMK you can walk right through the construction sites, guess the plan is to have restaurants up there.

At BKK just take the glass-in elevator up to the top level, had to give the security guard B100 at the time they were doing construction there too at the time but maybe having the excited baan-awk kids with me helped too.
