His Masters Voice
I bought some coconut cream by accident … I thought I picked up a can of coconut milk, so I used less of the cream to make what I was cooking. Can you freeze coconut cream? I presume not, but better to ask. How long does it keep in the refrigerator after you have opened the can?
VBF
Never tried freezing it but I've kept some in a screw-topped jar in the fridge for 2 weeks and it was perfect after a good stir. The smell will change if it goes off, so you'll know! Why not try freezing a little of it as an experiment? Edited July 23, 2014 by VBF

AyG
You can freeze it. The taste is the same, but the texture isn't - it sort of flocculates. It's fine for things like coconut rice, but I wouldn't use it for a curry or a yam.

Yes, I want to use it in a curry, so I won't freeze. 4 days later, in the fridge, it's still good.

His Masters Voice
Well, it didn't last this long, but the cream was still OK after 2 weeks in the refrigerator.
