Yes, you should be able to root it, even swap in new launcher, even a custom ROM.

Just make sure to search for the root process using the exact model number of the phone as there are several models using the same name (and some use different techniques to acquire root).

I rooted a Galaxy Y and put a custom CyanogenMod Rom on it -- much more user friendly.
