You may have a problem with boarding the plane if you do not have an onward flight out of Thailand within 30 days of arrival but otherwise the plan would work.

Yep.

At the end of your first 30 days you can extend for another 30 days at an immigration office for 1,900 baht. That'll give you about 60 days before you need to go to Laos.
