Hi,  I'm in Thailand on a single entry tourist visa and just got it extended by 30 days and it will end on March 8th. 
My question is after it ends can I fly to let's say Vietnam for a weekend and then return to Thailand and get 30 days admittance?

You could fly out and back or do a border hop to get a 30 day visa exempt entry without a problem.
