I have the problem of getting the nice crusty brown shell on the rolls and even the pizza dough. I have a large (toaster) oven that goes to 250C. I've used my granite stone (preheated), used a baking sheet and even just the oven racks but I cannot get that golden brown shell. Is it the oven?

I apologize for intruding on your question but the FBar issue has always puzzled me. For example:
United States persons are required to file an FBAR if:
- The United States person had a financial interest in or signature authority over at least one financial account located outside of the United States; and
- The aggregate value of all foreign financial accounts exceeded $10,000 at any time during the calendar year to be reported.
I have a pension and SS income that is direct deposited into a US bank account. All money is taxed before deposit. I use TaxAct for income tax filing.I then wire transfer every month to my Thai bank accounts. There is never more than 90,000 thb in the Thai banks per month but through the year it obviously adds up to over $10,000 US. The word "aggregate" in the above statement is what confuses me. Does that mean $10,000 US at one time in the bank or do I still have to do an FBar because the money is spread throughout the year?

I have what you describe. I'm about 70k East of Nakhon Sawan but also 10 East of the main Village. High speed internet from the cable companies do not extend their wiring to my more remote Village so I had to settle on the dish. I've had it for about 3 year and it's a TOT set up. I think I paid a refundable deposit for the equipment but the monthly cost is outrageous. I figured I could hide it in the rear of my small property but TOT actually determines where the best signal comes from, so of course it was in front of the house and if I wanted the best signal I had to settle on this placement. The dish is huge and unsightly but over time it blends into the surrounding (not really but I pretend it does)
The speed if iffy day to day, but much better than an air card or any other gadget that operates from those satellites. It's certainly not high speed internet. I think I get 1 or 2 mg download speed as opposed to 5 or 10 with wired systems from the line poles. You can buy a wireless router from TOT before the setup. They did all the installation and wiring in a few hours.
Monthly internet bill is 3000 Baht as opposed to 600 for real high speed in the town. It's a tortoise as compared to the hare but if I want internet it's what I have to do. Our school has a room full of brand new computers but no internet.

I never knew what those green "worms" were in the past. They look similar to what we call "tomato worms" in the States. We've been finding these in abundance here in Nakhon Sawan area. We are finding them even inside the house where there are no plants. I've never seen the moth and it's hard to see it in your picture. So what is the solution to get rid of these things other than to squish them when found? How about the moth?

I pay Federal and State taxes from my pesion checks enough to cover my SS and pension income. I transfer my money from my account in the USA to my Thailand bank account every month as a source of my income. If my Thai acount accumulates 300,000 ($10,000) do I then need to declare this as new income even though it's been taxed in the USA?

I apologize for intruding on this posters subject but I have a question about a Visa. I have a friend who will be visiting for 45 days. He does not have a tourist Visa but will be coming in on a 30 Visa. We are going to visit Vietnam during his stay about 2 weeks into his trip. When he flies back to Thailand from Vietnam will he be issued a new 30 day stamp. Thanks.

I have a friend visiting in October and plans to stay about 45 days. He gets a 30 day upon arrival. If we visit Vietnam during his stay and fly back to Bangkok will he get another 30 day Visa upon this second arrival? Thanks for any help.

Now this is the kind of stuff that pisses me off. I've been suspended before for using one word answers to this type of poster so I'll refrain from that one word. To quote from the poster:

Writing something like this does not add to any post so why waste the ink? It seems to me, my friend, you need to polish the English you write before accusing another nationality of being lazy. As a supposedly "lazy" American I will correct the mistakes for you.
There is only one English language. (a period, my friend, not a comma at the end of a sentence)
Americans have been lazy and adapted it to their own ways, however, we both understand what we are trying to say. (spelling, grammar and punctuation are important, my friend)
The details are in the difference and that is what readers need to think about. (sentence structure my friend)
Re-read your article and try to find the many mistakes you made. You really don't have a clue, do you?

Small Village in Central Thailand. Retired from Pattaya a few years ago.
- driving the motorbike on the Village roads only to be confronted with a herd of 50+ cows walking toward you, spread across the entire road, 1 herder with a slingshot in the rear of the herd. Now what? The massive beasts suddenly separate much like the Red Sea and allow you a small passageway between them and with inches on either side you make it through the gauntlet as the shepherd smiles a toothless grin....whew!
-driving down the same road and see 2 bull elephants in the distance heading toward you on either side of the road. Pretty cool, you think, as you proceed to get a close and up front sight of these beautiful animals. Just as you're about to go between them slowly they move to block the entire road. Uh Oh, now what do I do. Look up to see the mahoots again with large toothless grins smiling down at you from their great heights. Two elephant trunks reach out for you nibbling at the air. Wits about me, I whip out 2 twenty baht notes and put one out to each trunk. Gently the notes are removed from my hand and taken up to the master, who looks down, smiles again, tips their hats and the elephants separate wile I hear them silently say "thank you sir, you may proceed". Wow, what a rush and a great experience.
-besides the meetings with elephants and cows the road is filled with potholes, dings and sometimes washouts that seem to change daily. It's like riding through a real life video game where you lose a life everytime you hit the hole. They do mark the washouts with a simple stick with a plastic bag tied to the top. Thus, I never drive at night.
- the neighbors who go out and buy a brand new pick-up, 2 new motorcycles but can't afford to replace the sheet metal corrugated siding on their house. With no air holes, except for where the rust spots have gone through, I can't imagine what it's like to sleep in the heat surrounded by tin.
-trying to be anonymous as the only Farang within 70 kilometers. Can never just hide except when I go to the bathroom.
-not removing the bones and gristle before cooking the rat, snake or frog is a pet peeve.
-at Peace with Village life. Retirement is grand.

If you apply for a 1 year extension of stay and your passport is only valid for 8 months, you will get an extension of stay for 8 months. Before those 8 months are finished, you need to get a new passport and when you have that apply for a new extension of stay, with all required paperwork. You then get a new 1 year extension of stay.
So apply on January 1 for a 1 year extension of stay with a passport that is valid till 1 September, you only get an extension of stay till 1 September. Before 1 September you go with your new passport to immigration and apply for a new 1 year extension of stay for 1,900 baht and all necesarry papperwork.
If you go after 1 september, you are on overstay at 500 baht a day with a maximum of 20,000 baht.
Thanks Mario, this seems to be the most logical answer to everything but just to clarify my own situation:
My US passport expires January, 2015
My retirement Visa is issued every year in March.
In March, 2014 when I go to renew my passport will only have only 10 months remaining.
thus,
I should renew my passport before March, 2014, but do I lose that 10 months remaining in the passport or will the Embassy give me a new one with 10 years, 8 months validity?
When I go to renew my retirement Visa do I bring the old and new passport?
Will they transfer all relevant stamps to the new passport or will I always have to carry both?

Just remember when you do report early, your next 90 days report is 90 days from the day that you do your report, not 90 days from the report date on your form. I always do mine by mail about 10 days early and accept the new date. The ems, 37 baht, and the 10 baht stamp, total 47 baht, is a lot better than driving 200 kilometers and going in person. It also saves me a lot of baht since immigration in Nakhon Sawan is close to Big C and my wife always wants to tag along!
I use Nakhon Sawan immigration as well. I live about 70k East but enjoy getting out of the Village and into the big city. However, if I had to use the mail in can you give me some details please?
What paperwork do you send?
Do they have a special mail envelope available at immigration?
What do you get in the return mail?

I live in a small Village in Central Thailand with a main town about 10K away. I have driven my PCX 150 for about a year now with a daily trip to the town market. I thoroughly enjoy the ride. The power is sufficient and the ride comfortable although still could use some stiffening in the rear shocks with 2 people. The multi braking system is great (both rear and front brakes engage together).
The only negative is that I've been caught twice with a dead battery (my own fault) and there is no secondary kick starter, so the battery needs a jump or charge.

My Thai wife and I have been together for 8 years and married for 3 years. We live in our Village in Central Thailand. She was married prior for 10 years, divorced for 10 years and have a daughter who lives with us, 19 years old. She bought a small piece of land (1 ngan) while she was still married and her ex-husbands name was included in the blue book. I built a house on the property 5 years ago and have a yellow book at that address. She tell me that her ex's name in the blue book is insignificant because he doesn't live around here (the parents do). Is this something I need to be concerned about?

I have been volunteer teaching in my small Thai Village for the past three years. My backround includes 25 years as an educator (17 in educational administration) in America before retiring here five years ago.
The reasons for volunteering are boredom (I am the only Farang within 70 K and speak Thai enough to meet my needs), being comfortable in a school setting, having fun, enjoying kids when they are learning and generating respect for myself in the place where I live with my wife and her family.
The school is small with an average class size between 8 and 10 students from Pre-school through grade 9. Not being under any contract or monetary obligation I can choose my own hours and grade assignment. I work with students in grades 1,2,3 and 4 five days a week. Half hour lessons are most effective. When I see the first fidget I know I've gone too long.
Being animate and exciting are the keys. I am in constant motion and not plopped behind a desk. I always use the chalkboard to provide another stimulus and try charade like body gestures to get the meanings across. Changing subjects in 5 minute intervals are beneficial to learning (go from colors to numbers to ABC's, etc) Coming back to the same subject during the half hour works effectively to provide the repetition of what you are trying to teach. In the younger grades teach vocabulary using objects they can associate with everyday (desk, pencil,house,tree, etc.). I often ask what the same thing is in Thai and let them have a giggle with my mispronunciations. Speak slowly and enunciate the English words. The benefits of a small class size is that you can see every student sound the word at the same time. Over the course of time these vocabulary words can be used in complete sentences.
I greet the students in English when entering the class. They all stand up to greet me in English ( all with a Wai which is so cute). When seated I have them individually greet their classmate with the typical "Good morning _______. How are you today? The real purpose of this is to get them speaking comfortably in English. I don't think it's the lack of ability of Thai learning to speak English but rather the shyness of trying.
I could ramble on for hours but I'll leave you with the thoughts that working with children in a learning situation will bring more rewards than you can imagine and you are giving back to the world.
