my gf is in Thailand on an education visa. We want to leave the country for a while, but her single entry visa is used, and by the time we come back the ed visa might have expired. 

How to tackle this exit and re entry?

 

She could get a re-entry permit to keep the remainder of the 90 day entry from the non-ed visa valid when she re-enters the country.

You can apply for an extension of the 90 day entry at immigration with supporting documents from school she is attending. The extension can be applied for up to 30 days before the 90 day entry ends.

After getting her ED-Visa extension and a re-entry permit, if flying-in, be prepared for a grilling, possible forced-flight purchases, and even denial of entry.  Here is a recent 1st hand report (forced ticket-out purchase), which references a 2nd-hand incident (denial of entry):

 

The way to avoid this potential issue would be to use a friendly land-border, where she should have no problems.  But, at any entry-point, she should be sure to be carrying 20K Baht worth of cash or travelers checks and have the complete address of where she will be staying in Thailand.  I would also carry proof of finances (showing no need to "work illegally") plus a letter from the school explaining her absence from classes.
