Because of the difficulties I encountered getting an extension to my tourist visa "permission to stay" in Jomtien, I was wondering if anyone knows if the visa/ copy shop next to the immigration office offers the service of doing the legwork for you. And what the cost is.

Not being familiar with the 'difficulties' you experienced, not sure if that office can assist. However, they do have a real good handle on what exactly is needed and if 'doing the legwork' simply entails taking a position in a queue, then I think they can assist that way. If there's some piece of required paperwork or evidence that you are unable to provide, that will probably be beyond their remit, but they may know someone who can assist.
