She will get 30 days as a tourist - no visa...in that time get her a Thai passport....  

 

You will have to go to immigration and see options...could always make a border run and enter her on then her new Thai passport...

Passports CANNOT be swapped at land borders.

Possibly the best way to do this: 

 

If you have no time to obtain a longer-term Visa for your child:

Your child can enter Thailand on their Australian Passport - 30 day Visa Exemption Stamp on Arrival.

In Thailand Obtain a Thai Passport.

Depart Thailand (by Air) on your next trip (whenever that is) with the Thai Passport. Your child will have overstayed but cannot be charged for overstay - thus there is no issue. 

Re-enter Thailand on Thai Passport.

is the baby male or female?  if the baby is male you might want to take into consideration that all male thai citizens are required to serve time in the military.. before getting that Thai passport for your child

 

I have dual citizenship... US/Thai but I bypassed military service due to obtaining my thai citizenship in my 40's

My daughter came into Thailand with no passport.  Got her Thai birth certificate from the embassy in London and they provided a letter stating that she was a Thai citizen and entitled to enter the kingdom.

Once here, a Thai passport was applied for.

No major problem.
