I have an Irish passport and haven't done a Land crossing into Thailand for many years.  I always fly back.

 

If I do a crossing into Malaysia or Mae Sod (Myanmar) and come back the same day, how many days will I get from Thai Immigration?

Visa exempt entries are 30 days, regardless of whether you enter by land or air. The only difference is that there is a limit of two visa exempt entries per calendar year when entering by land. If desired, you can extend a visa exempt entry for a further 30 days at an immigration office inside Thailand on payment of 1,900 baht.

 

EDIT: Maesot is a better choice than Sadao (Malaysia) as the latter may insist you spend a night in Malaysia.
