Cheese & Onion Bites

·85g plain flour

·50g butter, chopped

·75g Tasty mature cheese

·2 eggs, well beaten

·½ onion very finely chopped

·Pinch of Salt

·150 ml water

1.Sift the flour and salt into a bowl.

2.Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts.

3.Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.

4.Remove from the heat, beat in the grated cheese and onion. Cool for 5 mins.

5.Gradually beat in the eggs until you have a smooth, thick, but spoonable mix Note:- you may not need all the egg. The mix can now be set-aside covered up to 1 hour without chilling.

6.When ready to serve, heat oil in a deep frying pan / wok to around 180C. Using 2 teaspoons scoop up neat dollop and carefully drop into the hot oil. Fry 6-8 at a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. (mix will yield about 15 – 16 bites)

7.Drain on kitchen tissue, sprinkle with salt and white pepper. Serve hot.

looks a bit like an onion badjee recipie except fer de last part...Fred C Dobbs: 'if you are an indian chef, where are yer badjees'...Alfonso Bedoya inna chefs hat: 'badjees?...we ain't got no badjees...we doan gotta show you no stinkin' badjees!!!' then gunfire and associated violence...
