For single page documents you can use the screen capture feature.  Mac includes a very easy to use tool.  I can no longer remember what Windows offers.

^the printscreen button and paste into Paint will work in windows.

I just realized that if:

 

- I use the scan option in my HP basic home printer/coper/scanner*, and

- set the scan output to be a jpeg file, before starting the scanning, 

- I can scan multiple documents, then save/create a file

- all done, all jpeg documents in the file created.
