I am american and my wife is from El Salvador.

My wife is working at an international school and I have a child studying at a different school.

My wife's current WP finishes up in September (passport expires and she is getting a new one). She has just been given a new one-year contract starting from August and the school will arrange for a new WP once she gets the new passport.

I want to apply for a non-immigrant visa as a spouse so I can come and stay/visit often (I work outside of Thailand).

What documents would be required to apply for such a visa.

What I have now is:

1. copy of wife's current WP.

2. copy of her contract for the next school year.

3. copy of her old passport with old 'O' visa

4. original marriage certificate.

Anything else needed?

Also, any experience in people getting a one-year multiple at embassies/consulates in the region in this situation.

If not, is a year-extension possible?

TIA

You need to contact the Consulate that you plan to use to obtain the visa to find out exactly what they require. It varies from place to place. In any event do not believe you will obtain a multi entry non immigrant O visa. I believe the normal procedure would be a single entry visa that you then extend to match the spouse extension of stay in Thailand as per section 7.19 of Police Order 606/2006 which is linked from pinned items at top of thread and below. Another option would be your student dependent but that would require 500k in a bank account. If you obtain one year extension of stay you will also require a multi re-entry permit because of your frequent travel at 3,800 baht.

Generally you need ALL the paperwork that she submitted for her visa extension, proof that you're related (marriage-certificate) + an up-to-the-minute letter from her employer that she is still working for employer.

Odds are that once you are in the country on the non-immigrant O, the school will handle your extension of stay. As well as talking to everyone else here, talk to the school as well to make sure you bring what they need.
