Bread machine Hafele.

Hi all,

 

There is an bread machine thread about 4 year old, but I was wondering if anyone  has this Hafele bread maker or whether it seems a decent one given the sale price.

I can cook bread in my oven in Bangkok but where we are at the moment I don't have an oven.

It's a Hafele from Central store.

I've had the 3lb version for just over a year.Used every week, It's always produced great wholemeal bread.

I bought a 2lb last week. I have used it twice and both time the bottom of the loaf rather soft. It was a white loaf both times, once on light colour and once on medium colour.

I don't know what the problem could be, but it's important to put the ingredients in the pan in the same order as the recipe list.

I just remembered.

Once the bread has finished baking, lift the lid of the machine and leave the bread to cool fully in the pan.

Yes I put the ingredients in the order wet to dry. I was under the impression by leaving the bread in the pan it got wet from condensation, I'll try leaving it in.

Once the baking is finished, it adds 30 minutes to the timer to let the bread rest.

I liked the taste of the bread that it was making but I found that it was too dense,

The wholewheat recipe was a little too heavy and the basic recipe was to light (in taste).

So, I tweaked the recipe and changed how I made it.

I felt that the programmed time that the bread was allowed to rise was not long enough, so I now make the bread in 2 stages.

After I have loaded all of the ingredients, I run program 10 (Dough) which takes 1 hour 40 minutes and then immediately turn out the dough onto a lightly floured surface.

At this stage I can then remove the paddles, which prevents tearing the bread when trying to remove them after the bread is cooked.

I shape the dough (very gently) into the shape of the pan and then drop it back into the pan.

I then leave it to prove for about 1.5 hours and then use the ‘Bake function – Program 15 (1 hour).

You could set this up on program 15 (Homemade) but you would then have to remove the paddles afteer cooking.

The process I use is time consuming but I can make the bread over the weekend and freeze it until needed.

My tweaked recipe (in order) is as such:

430ml water

3 tbsp oil

3 cups of bread flour

2 cups of wholewheat flour

4 tbsp dried milk powder **

1 tsp yeast

2 tsp salt

2 tbsp sugar

Will give it a go, although the French setting, no 2, seems OK for me, medium sized.

Last time I went to buy powdered milk at Makro they were sold out, so I bought Carnation Baby Formula. It works OK, and I am sure there is a joke in there which I cannot think of at this early time. 555

Just got mine this afternoon, used the standard 1.25kg white bread recipe (no milk powder) on menu 1.

Looks pretty good ......

2nd loaf, wholemeal menu 3 this time.

Reduced the wholemeal to 100gm plus 600 white, no milk.

Absolutely perfect .......

On my next batch I will have to try it without the milk and see what the difference is.

I just thought I'd share my wholemeal bread recipe. It's never let me down.

Breadmaker is Lahome, double paddle.

It makes a 3lb/1.5 kg loaf. Add the ingredients in the order below.

520 ml Room temp water

4 tbsp oil

2 or 3 tsp salt. Place in corner of the pan

2 or 3 tbsp sugar. Place in opposite corner of the pan

3 cups/420 gms Bread flour

4 tbsp Milk powder

3 cups/420 gms Wholewheat flour

1.75 tsp Yeast

Select menu No3

Select crust colour

Select loaf size

Hello,

My bread in Hafele machine was always fine until the last 4 consecutive loaves including this morning. It's now smearing around the bottom of the pan and doesn't rise.

Using the same measurements as always.

I have used different yeast sachets from different boxes, used new flour bags, lowered temperature of water originally was 110, today 103 degrees.

Any ideas why it's going wrong now?
