Last November I got a Retirement visa from Chiang Mai. But I've been living in Trat province

for the last 5 months. I'll be flying back Montreal from Bangkok soon and would like to know if

I can state that I'm now in Trat.

Just do the reentry permit at BKK airport.

Opt for the 200 baht service fee where immigration do the TM8, photo etc.

The address won't be an issue.

At BKK the reentry desk is zone 2 after security and PRIOR to immigration passport control.

You don't "state" that you are living anywhere. The TM30 is what reports where you are residing. The owner of where you reside should have done a TM30 5 months ago.
