Is there any european destinations that myself and my wife(who is Thai) and currently here in the U.K on a Two year settlement visa can visit without obtaining a new visa.

That's correct, although an application would still have to be made to the relevant embassy, and the OP's question asks where he can take his wife without having to get prior entry clearance.

Anyway, Russia hardly falls within the definition of "European destinations" requested by the OP.

Last time I looked, Russia was located in Europe, at least for a large part.
