From a series of articles a few years ago, so the information might be dated:

700 Year Stadium: "Swimming lessons are available on Saturdays and Sundays. There are four, two-hour time slots on those days. You can book lessons from 8 a.m. - 10 a.m., 10 a.m. - 12 p.m., 4 p.m. - 6 p.m., and 6 p.m. - 8 p.m. The cost is 1300 baht for one student for 8 sessions, a total of 16 hours of instruction. The fee decreases for each student, up to 4 maximum enrolled in the same group. There is also a 10 baht entry fee for each student each day. Classes commence the 1st Saturday of each month. Instruction is provided by young Thai physical education graduates, according to a standardized teaching program."

Chiang Mai Land swimming pool: "Swimming lessons are available at Chiang Mai Land pool. Lessons are for any age, any nationality, and cost is 1000 baht for 20 hours of instruction. There are one-hour time slots available starting from 3 p.m. to 6 p.m. The head instructor is Khun Manop."

Sara Swimming Pool: "Swimming lessons are available at Sara Pool by appointment; the cost is 1000 baht for 20 hours of instruction. Get more information at the desk, or contact Tik at tel xxxxx."

These look like prices for group lessons but I am sure you could negotiate for private lessons.

A recent member of the Thai National Swimming Team, and now a full-time professional swim coach, Payu offers private swimming lessons for adults at 350 Baht per hour which includes the pool entrance fee. He speaks fluent English and Thai, and is the senior swim coach at the Centre of the Universe, Swimming Pool and Resort, Chiang Mai.

There is also a young English guy, Anthony, who offers swimming lessons in Chiang Mai. He is not affiliated to any specific pool and will travel to your chosen venue.
