You are thinking of more Jamaican style Carib food, but perhaps some Cuban food (yes, very different) might be nice as well? I never heard of pineapple being used with it, though I can image a chunky pineapple chutney spiced with Carib Scotch Bonnet hot peppers would compliment the chicken quite well.
