New I7 System Build

I will mainly use this system for AVCHD video editing and sometimes gaming. Comments appreciated. It would be great if you could also recommend some stores in Pantip where you have bought hardware before.

I will also just let them build the system in Pantip and later add two 500 gb drives in RAID 1 to the system. I never configured a system with RAID so is this possible without losing the data of the first drive that was built in? Any pointers how I can set up the two 500gb drives with RAID 1 on this system would be great.
