I would remove the skin coz I don't like the taste/texture, but maybe that's why my bacon kinda "shrank" too much while smoking.

I guess I'll remove the skin after smoking?

Oh wait... I don't have a smoker in Thailand! (nor a yard)

Bacon looks great .... I'm smoking some tomorow too... maybe I can remember to take some pic's.....

I do rind on as well .. I like the extra texture it brings... and it gets nice and crispy

No. it's an imported stainless steel on where we can smoke 500kg at the same time.

A lovely machine: It smokes, steams and chills the products.

I better not ask what that unit cost ..... But I am looking into one from Vichy for about 40,000thb does around 80 to 100 kg and no steam or chill function....

You do a hot smoke or a cold smoke? What kind of wood do you use? Local wood or import? I really like a cherry smoke.
