December 22, 200916 yr I bought some cake flour (thats what it says on the label) intending to make a Victoria sponge with jam and cream filling. However the mixture did not rise at all. So is the "cake flour" sold here not self raising??, and if so how much baking powder should I add to 8oz flour to fix the problem. cheers Freddie
December 22, 200916 yr Cake flour is not self rising. Self rising flour is. See below for a recipe: http://allrecipes.com/Recipe/Victoria-Spon...ake/Detail.aspx If you choose to use your cake flour in place of all purpose flour, add 2 tablespoons of cake flour for every cup of bread flour you use. December 23, 200916 yr Most websites I found recommend adding 1 1/2 - 2 teaspoons of baking powder and 1/2 teaspoon of salt to each cup of cake flour to make self raising. For your recipe 8oz of cake flour is around 2 cups so you probably want around 3-4 teaspoons of baking powder.
