Seismic Posted December 22, 2009 Share Posted December 22, 2009 I bought some cake flour (thats what it says on the label) intending to make a Victoria sponge with jam and cream filling. However the mixture did not rise at all. See below for a recipe: http://allrecipes.com/Recipe/Victoria-Spon...ake/Detail.aspx If you choose to use your cake flour in place of all purpose flour, add 2 tablespoons of cake flour for every cup of bread flour you use. Gippy Posted December 23, 2009 Share Posted December 23, 2009 Most websites I found recommend adding 1 1/2 - 2 teaspoons of baking powder and 1/2 teaspoon of salt to each cup of cake flour to make self raising. For your recipe 8oz of cake flour is around 2 cups so you probably want around 3-4 teaspoons of baking powder. Link to comment Share on other sites More sharing options...
