You can but they love US$

Your rate for baht/ringgit will not be very good.  Additionally, the US $1 bill is accepted for anything, and usually what you pay for in dollars will be slightly cheaper than if you pay for it in riels.

If I take US dollars do they give change back in US dollars?

The smallest US Dollar I can get is $10 or $20
