My gf is currently in the UK on a visitor visa , she initially stated that she would be returning to Thailand on the 25th feb. She now wishes to stay till her visa runs out on the 13th april.

My question is would she get into serious trouble if she did this.

No. As long as she leaves the UK when or before her visa expires she will not have broken any rule.

However, to avoid any possible damage to her credibility when/if she next applies then in that application she should explain why she stayed longer on this occasion than originally stated; especially if she said she had to return to Thailand in February for work.
