I am starting to read เจ้าชายแตงโม and am already stuck on the first paragraph. What does the highlight section mean?

There was a prince who ... ... really loved great tasting watermelon?

There was a much loved prince who ???

I'm struggling to understand what โปรดรสชาติ is modifying.

ณ เมืองอโรคยา ซึ่งอุดมไปด้วยผลไม้นานาชนิด ยังมีเจ้าชายองค์หนึ่งโปรดรสชาติของแตงโมเป็นอันมาก ที่หลังปราสาทของพระองค์มีแตงโมอยู่ต้นหนึ่ง แตงโมต้นนี้จะออกลูกทุกวัน วันละ ๑ ลูกเท่าน้ัน ทุกๆ เช้า

โปรด in this case means the same thing as 'chawp' i.e. 'to like'.   รสชาติ means 'taste', it is a compound word. There was a prince who "greatly"/"really" liked the taste of watermelon. "เป็นอันมาก" is a formal way of saying 'much', 'a lot' - it modifies the verb 'โปรด'.

Obviously to make a proper English version you would word it differently, perhaps 'who was very fond of [the taste of] watermelons'.

Okay...back with another question.

What is the meaning of แก่ in this sentence? (old?)

อือ เพื่อเห็นแก่ความกตัญญูของเจ้า เราจะเว้นโทษแก่เจ้า

Uh.... because I see the gratefulness of thee. I will withhold thee's punnishment.

(hahaha...pardon my use of thee thee's...not sure of my own English grammar)

เพื่อเห็นแก่ here means 'for the sake of'
