Which is the most accurate?

มั่นใจ is the one I see written more often, especially on posters such as political ones.

เชื่อมั่น to me reads belief.

Depends what you are trying to say, I can believe someone but have no confidence in them.

Are you talking self confidence?

I'd say slightly differently - ความมั่นใจ = confidence, ความเชื่อมั่น = strong or firm conviction.
