Could anyone explain whether ภาษากาย and ภาษาท่าทาง are used differently and give examples if so.

Language is about words and these concepts are basically English so you can practically make up your own mind as well as anyone else as to how they might be used.

This would be a matter of opinion and providing context would be equally opinionated.

You could split hairs now or wait and see them in context, consider who wrote them, and decide.

As you know; ท่าทาง ว. กิริยาอาการที่ปรากฏให้เห็น เช่น ท่าทางดี ท่าทางไม่ดี, บางทีใช้ว่า ท่า ก็มี. .

The piece goes on to explain some cultural differences; การแลบลิ้น which they describe as; Maori greeting, so I guess การแลบลิ้น means, sticking your tongue out.
