I know it sounds a bit gimmicky but are there any instructional videos or DVDs of people conversing in Thai for us to learn from?

Could have subtitles in England and Thai script under the dialogue to help you learn to read and speak Thai.

Does such a thing exist?

Practical Thai Conversation dvd's volumes 1 and 2 are exactly as you describe, with a booklet that has the dialogues in Thai, karakoke Thai, and English with a vocabulary list.

Thai PBS has a show English Breakfast. English lessons for Thais which is also good as Thai for farangs. No Thai subtitles though.

They usually say something in English followed by how you say it in Thai. There is a bunch of them on youtube.
