I'm 48, from the USA and looking to stay in thailand for 6-12 months. I plan to study thai language and muay thai, but do not want to be limited to schools that offer a visa ed visa package (don't seem to be very good schools/programs). I'm wondering what my options are if I can just get a 60 day tourist visa, extend 30 days and do a visa run to cambo or PI every 90 days. I assume I would need a new tourist visa when I do the run and repeart the cycle every 90 days?

Get a two or three entry Tourist Visa in USA

Two entry would give 6 months.

Three entry would give 9 months with extensions and border runs.

Afterwards get a Tourist Visa from a country near to Thailand.

Triple entry tourist visa from the US. Get the visa just prior to coming. It will be valid for 6 months, but if you use it properly you can get almoist 270 days, with two border runs and three extensions. You can do it by courrier service. An Honary consulate that has been very friendly and efficient in the past is Portland. Here's the info:

Once you are here check out a few of the schools. You may find something you like and although will have to leave the country and go to a neighboring country for an Education Visa you may find something to study that does not require it, or tie you into it.
