Issan, S Thai, And Chiangmai-Style (Muang) Cooking Schools?

No green curry, tom yam, nor pad thai please!

Looking for an Issan cooking class - laab, sup nomai, som tam, gai yang, and the Issan ''curries'

Looking for Muang style cooking classes - Sai-U-Wa sausage, Chiangmai-style laab (laab nua deep!), plus more Chiangmai-style dishes (including that weird minced meat dish that tastes (nicely!) of chemicals)

How about that South Thai cuisine? Ahan Bak Thai. Spicy, stinky, sour, bitter, South-Thai food! Anybody know of any classes for this style? Gaeng Som, etc.

Looking to expand my cooking horizons beyond the standard Thai dishes.

Many of the schools do private lessons where I'm sure you can specify what you'd like to learn but it might be difficult to determine if they actually know until after the sai-u-wa end up looking like 7/11 hotdogs
