Hey Jaidee.

ButterIsBetter had a thread about this waaay back when he was getting started out making his pastrami. Search for the thread, or drop him a line n he'll sort you out. I seem to recall he found a couple different chemical options.

And back to your wood for smoking - (did I see that under the food subforum?) - I meant to tell you about ma dta khop. If you don't know these Jamaican cherry trees, already, if you've got a Thai significant other at hand, they'll know what they are. They're flavorful little pink/red berries, kind of cherry looking, but not a stone fruit. They grow abundantly and all over the sides of roads. You've probably got some right around your house out in the sticks. They produce abundant wood, grow easily, and the locals often chop them down without a second thought. So from trimmings or removals you should be able to find plenty. The wood is very similar to our hardwoods that we're used to smoking things with. Here's the Thai to google too. Look for the berries they picture beside some green ones, as many of the google images are of the wild ma dta khop which look pretty different.

Thai: มะตะขบ

Don't forget an invite out to taste the final product. We can talk about Uncle Jerry and the good old days....
