How does one say one doesn't mind doing something? For example: 'I don't mind cooking tonight' or 'I don't mind speaking Thai with a foreign accent'. I've considered ไม่ว่า and ไม่ห่วง but I'm not sure how appropriate they are.

"don't mind" in these context you must find other ways to express in Thai.

ไม่ว่า and ไม่ห่วง is definitely not right

The closest I can think of is ยินดี

ผมยินดีที่จะทำอาหารเย็นนี้

ผมยินดีที่จะพูดไทยแบบมีสำเนียง

Thanks for the suggestions - similar to the English 'I'm happy to cook tonight'.

Actually, there is a similar phrase in Thai. (Was in the shower when I suddenly remember.)

ไม่เกี่ยง

But the meaning is kinda more negative "not mind". I don't quite know how to explain it.

For example, I suppose it's alright to say

ผมไม่เกี่ยงที่จะพูดไทยแบบมีสำเนียง

But for making dinner or favors etc, it's best to use ยินดี

I actually recommend you to stick with ยินดี because if ไม่เกี่ยง is used improperly it may lead to faux pas or misunderstanding.
