I had this a few weeks ago at a restaurant. It was cooked (I'm sure) but served cold in a coconut milk dressing/sauce.

Delicious! I mean, this could be served in a michelin star restaurant. It was buffet, and I kept going back for more.

Has anyone tried this cold dish, do you agree that it's awesome, and, most importantly, do you know how to make the sauce.

I'm guessing the fronds were steamed then cooled before adding the coconut milk as they were very tender, but still a bit crunchy, and the milk did not have a green tint for them to have been cooked in it.
