I am trying to come over on a 1 year volunteer visa, but i have a impaired driving charge from when i was younger. Will this be a problem?

A criminal back ground check is not required to get the visa you will be applying for. So no problem to get it.

1 year volunteer visa? What are the requirements? Can one just teach one hour a day in a temple/school and that's it?

The requirement is that a credited organization sponsor the application. Many volunteers are even paying for that.
