Although I'm sure it's very different in Thailand, a bouncer by law, as a trained person/first responder, is responsible for everything within eye sight and the local amenity. Also, if the guy has committed an indictable offense, the supposed head butt, he had every right to follow the perpetrator to attempt to restrain him (a citizen arrest) to detain him until law enforcement arrives.
