I was looking at my passport and noticed that my stamp says to leave after 30 days ( Nov 15 )

But I have a METV which is good for 60 days. Should I  A: ignore the stamp and explain when I

leave in a month or B: waste a day at thai immigration in BKK. ?

You need to get it corrected, if you don't and leave after 60 days it's very likely you will be paying a 15,000 Baht overstay fine

Chaeng Wattana Immigration have special desk for this kind of problem

Best to get if fixed to avoid a problem when leaving the country.

It will not take long at Chaeng Wattana immigration since they have a desk for fixing stamp errors.
