I'm currently on a non-b visa + year extension until march 31, but I will be quitting my job when school finishes in march, I was looking at getting a non-o based on having a thai child, I am not married as of yet.

what documents are needed for Vientiane to get this type of visa?

could I get an extension based on having a thai child with my non b?

You could apply for a 60 day extension to visit your child when your extension of stay (it not a visa) is canceled. Your child will need to be with you when you apply.

You will need a copy of your child's birth certificate plus a copy and a copy of their house book registry to apply for the 60 day extension or the single entry non-o visa.
