Is this possible after doing 2 land crossings per year

Is it okay to drive to say siem reap to get a 60 Day tourist visa after you have also done 2 30 Day land crossings or do you have to fly out?

Yes. The 2 entry limit applies to visa exempt entries only.

 

That said avoid using the Aranya/Poipet border crossing as they don’t like long term tourists and might deny re-entry even with a tourist visa.

If returning with a visa, the limit on land crossings for a visa exempt entry does not apply. That said, I assume you are aware that there is no Thai consulate in Siem Reap. If you want to get a Thai tourist visa while there, you need to use an agent, and it will take about a week. Vientiane or Savannakhet would likely be better options. As advised above, avoid the Poipet/Aran border crossing where the Thai officials are crooks.
