Stuffed Hash Browns + Cheese and ham

Serves 4 (IDEAL BRUNCH MEAL with bacon, eggs, etc)

Ingredients

For the Hash Browns

·500g potatoes, scrubbed well - do not fully peel them

·1tsp snipped chives or the green of spring onion

·1tsp chopped parsley

·1 medium egg white (no yolk)

·Salt & freshly ground pepper

·100g Tasty cheese, and 4 ham slices.

Method

Bring the potatoes to the boil and cook until just firm, then drain & cool.

1.Peel and grate the potatoes into a bowl.

2.Stir in the chives/spring onion, parsley, lightly whisked egg white with a pinch of salt and pepper.

3.Pat out a quarter of the potato mixture to a circle, place quarter of the cheese / ham in the middle.

4.Fold the potato mixture over and pat to a thick disc shape.

5.Repeat with the remaining potato, and cheese / ham

6.Heat Oil to 160c and fry until golden brown on both sides. (Drain on kitchen tissue)

Why did you have to put that photo in as well?

I am on a diet and I am not allowed ANY fried food for another 8 days.

I am soooooo bored with salad and broiled chicken, however I have lost 5.5 kg so it must be worth it.

Why is there no smiley that drools?

The problem is I have been too fat tooooooooo long.

Now I am going to have nightmares about food tonight.
