Visa exempt entry extension on first day

Maybe is the best answer you can get. There is no hard and fast rule; however, I wouldn't take the chance of a wasted journey unless absolutely necessary. You can apply at any immigration office and usually they will accept application within the last 7-14 days. In busy periods they might not accept an application until the last day or so.

Anyone with experience of extending (very) soon after entry?

At Chaeng Watthana they're more accommodating than elsewhere, but going there more than 14 days before your visa exempt entry expires is stretching it. If you have a good explanation (not sure what that might be - there are immigration offices all over Thailand that you could use), they might do it, but there's no guarantee.
