Deep-fried Chicken (in Large Wok) Had In Ko Lanta (with Pics) - Recipe?

Hi everyone,

Recently returned from my second trip to Thailand, where we spent some time on Ko Lanta. While on Ko Lanta, on one of our ventures into Saladan, the main little town, we ate the most amazing deep fried (in a large wok) fried chicken from a street vendor in the middle of town. Would anyone be able to identify what it was she was making, in terms of specific style, name, recipe etc? See pictures below.

The chicken came out, as you can tell, with almost a reddish hue to it. From what we could tell when we watched her make it, the chicken was first marinated, then dredged in a reddish batter (you can see the bowl with the batter in the background of the first picture), then "deep" fried in a wok (second picture), to get the end result (third picture, blown up from #1). If anyone could point me in the right direction of how to approximate what she's done here, it would be most appreciated. Thank you!
