Has anyone been to Jomtien Immigration recently to show updated bankbooks to prove they still have the required funds in their bank account ?

Is this still required ? and what would be the penalty for failing to provide this information to Immigration /

Jomtien has only wanted it to be done one time and that was 3 months after the day you applied for the extension.

Did they give you a paper document with a stamped date on when to come back?

Yes I was given a paper dated 13 April but I had to ask for it

I was never given a paper, and so I asked about it, and was given a date but no paperwork. Due to present circumstances I didn't want to go to immigration for this and didn't bother, but did update my bankbook and will be able to prove it retroactively... maybe next renewal.
