Can a letter from my embassy (Canadian) be used to as proof of pension income to extend my visa. No money in a Thai bank.

It is nto the visa that gets extended but your permission of stay. The visa will expire but you can dio annual extensions of your permission to stay.

Yes, if your Embassy issues income letters, that can be used. Considre yourself lucky.

However you will be required to show proof of health insurance from one of the Thai companies on the tgia website

If you used insurance fro ma foreign company for your initial visa, this will nto be accepted for the extension, has to be one of the companies on the "list"

Ok that's good and yes the Canadian embassy does issue those letters. I had to have insurance when I last entered the kingdom.
