No you cannot.

You can however get a new Non-immigrant O visa and start the extension process again once in Thailand.

If your extension of stay permit is going to expire in six months and you won't be in Thailand then. Show your plane ticket at Immigration and get your extension of stay permit renewed earlier.

I was overseas when my "non-imm-O visa extrension (retirement)" expired. My remedy was to obtain a tourist visa and upon return, have the tourist visa changed to a non-imm-O and then get the retirement extension. Two fees involved but so much easier that dealing with non-imm-0 overseas.
