I am in the Information Technology field in the United States and would like to continue my career in Bangkok. I thought that it would be easier to find a job in Bangkok if I started teaching English there while looking for a IT job (for when my Engish contract expires).

If I was to get a visa/permit and started teaching English, could I at some point apply for other types of work in Thailand and be able to transfer the remaining time on my visa to working for another employer or would I have to re-apply for a work permit. Also, would this type of arrangement make me more attractive to employ, then it would if I just applied from the United States.

No such thing as transferring a work permit. You can however have two jobs and quit one job. As for both jobs, both require a application and approval.
