Tourist sim unlimited
A regular SIM is all you need unless you intend to be engrossed in your phone screen all day long. I assume you would use your phone only when there was a need so any SIM will do. If you feel you need a SIM that is unlimited can you explain what use you would be putting it to? -

Its validity can be for 5,10, or 20 years, but on entry you only receive permission of stay for 1 year. At the end of that 1 year, you can either exit, re-enter to obtain another 1 year permission of stay, or extend your permission of stay for a further year at an Immigration office. The validity of a visa is the period during which you can use it to enter Thailand. The period of stay is different from the validity of the visa. -

If you've declared all that and they haven't put any special conditions on as a result then you should be ok. It's not declaring stuff that gets you in trouble. Quite often with common medication like yours which actually fixes the condition they don't add a loaded premium -

I recommend submitting applications to multiple carriers to see how each one handles your situation before making a decision. It’s frustrating that some insurers penalize you for taking proactive steps to manage your health. I get an annual wellness exam and take medications to prevent future problems, yet some carriers saw this as a red flag. Ironically, if I hadn’t monitored my health, I’d be at a higher risk but potentially more likely to be covered. -
