    Disable relevant permissions and or Apps like Ok Google, Google Assistant or whatever.........

    Just do a search online with whatever browser you use and it should give you suggestions to mitigate the issue.

    It's definitely not just the Pixel 7.
    EVERY cell phone, except the old ones, listen to everything you say & everything that others are saying to you.

    Check if Gboard’s "Voice Typing" is toggled on in your keyboard settings; it’s usually the culprit.
