That is polite enough and it sounds ok to me. But then again I don't know how you actually said it. You can try saying it slowly and use hand gesture...like 1 and then another 1.

or...you can maybe try

If the confusion is coming in that you want it specifically to take home you might use "glòng" instead of tee. They might also think that you are correcting yourself rather than ordering two dishes. (For a while I had a lady who just couldn't fathom that I wanted two dishes to eat for myself-why would someone eat two?-so she would just assume I mispoke. It got worked out though.) To make it more evident that you do actually want two dishes and aren't just correcting yourself I've added a few words in bold.

why do you say Thaa Phom instead of Thaa Khun?

In what situation would you use that? I don't recognize it.

Perhaps he is referring to: กระผม (gra-phom)

This is frequently said as a polite form of acknowledging what another person is saying. The word literally means "I, me" (male), but here it is a shortened form of the full, very formal ขอรับกระผม

In common usage, the "r" is often not voiced; it sounds like "ka-phom."

If that is indeed the word you are thinking of, the sense of it refers back to oneself as a way of saying, "I am listening/I am at your service," rather than directly telling the other person to continue speaking; that is why the first-person pronoun is used instead of the second-person pronoun.

In the event that my supposition about the question is wrong, I hope this can still be useful to anyone else who's been wondering what "ka-phom" means. It took me a while to figure it out. And it is a very nice thing to say. Cheers.

EDIT: Now I'm not completely certain - the expression may just be ครับผม - meaning the same thing. Does anybody know the relationship between the two expressions?

'phor jai' has to be analyzed as one here. The component parts mean 'enough' and 'heart; mind' so literally the whole expression is "enough-mind" - the word equates more or less to 'satisfied'.
