Basically my version is a fusion of these two recipes

Bill Smith’s version uses “Nom Com Wan” (sweetened condensed milk) to thicken the egg yolks instead of the original French version of lemon custard Tarte au Citron which uses butter.

Still, I couldn’t get it to thicken enough at room temperature so I added kefir milk and cream and more sweetened condensed milk to thicken it on the stove while stirring constantly so the egg yolks don’t cook into scrambled eggs

And I wanted to make it slightly healthier, thus the Ambrosia variant of the whipped cream and sugar topping with the addition of fruit soaked in orange juice.

For the fruit, my mother used to used canned fruit in heavy syrup with maybe a banana cut up

I used orange slices, apple and kiwis for the fruit, you can use anything.

Anybody want a slice of pie?

Hello I am somewhat confused by this. So to thicken the Lemon part of a tarte au citron, we would use caster sugar, corn starch, lemon juice and eggs. That's it. No condensed milk, no butter. You wouldn't really use butter at all for the lemon curd (which is what it is). If you wanted a clearer curd you could use agar agar instead of the corn flour. Beating with a whisk the egg yolks and sugar until white and thick is vital, and butter would break that I would think. For the topping a nice meringue, using the whites of the eggs not sued in the curd?
