ทำให้ข้อเท้าพลิก

I hadn't heard your two phrases before but looked them up and it seems that it would be fine to also say:

ทำให้ข้อเท้าเคล็ด

You're exactly right. I imagine พริก would be a better choice for the OP if he is talking about what happened (rolling the ankle) and เคล็ด if he's talking about the state of the ankle itself. Like you I don't know the severity of injury implied by เคล็ด. Bambina seems to be our resident expert in areas of medical vocab so maybe she can help us out.
